- Le pavé Simmental est une viande gouteuse et tendre. Ce morceau révèlera toute sa saveur grillé en le saisissant à vif de chaque coté. La bavette se saisit une minute de chaque côté pour caraméliser les sucs de surface de façon à laisser le maximum de jus à l'intérieur, ajoutez sel et poivre, nappez du jus de cuisson et dégustez.
- Le boeuf Simmental est élevé en Allemagne en Bavière dans les alpages. Notre assortiment se compose de 2 faux filets (440g), 3 bavettes (480g), 2 pavés (280g) et 2 entrecôtes (520g)..
- L'entrecôte, morceau de choix est épaisse et persillée. Le faux filet Simmental est persillé et tendre à la fois. Pour une cuisson rapide, il est préférable de le poêler avec un peu de matière grasse pour le protéger de la chaleur vive d'un grill. La bavette Simmental est un des morceaux les plus gouteux avec ses fibres longues et peu serrées.
- CONSERVATION : Le conditionnement sous-vide modifie la couleur de la viande, elle est plus sombre, plus terne. C’est le manque d'oxygène qui engendre ce phénomène. Pour que la viande retrouve son aspect initial, nous vous conseillons de la sortir du sachet et de la laisser à température ambiante une vingtaine de minutes avant sa préparation.
